Bitter & Twisted's Ross Simon Makes a Splash with Lylo Swim Club in Uptown 🍹

Lylo Swim Club at Arrive Hotel Phoenix has a menu as delicious as it is colorful.

If you know the Downtown Phoenix food scene, you know Ross Simon. He’s the mover and shaker with the Scottish accent, the mastermind behind downtown’s award-winning Bitter & Twisted Cocktail Parlour. And he’s also half of the brains behind Little Rituals — a sleek bar located in the Residence Inn hotel.

Ross and the team at Bitter & Twisted recently reinvented their menu with an amazing array of canned to-go cocktails and dim sum… And just when you think he couldn’t possibly be any more of a rockstar, he goes and opens a poolside bar, Lylo Swim Club, at the new Arrive PHX hotel in uptown Phoenix.

Yeah, we know. It’s not in downtown, but this 79-room hotel is a really big deal for our neighbors in uptown (woo!) and actually, it helps increase the number of hotel rooms available for conventions (a.k.a. a huge economic driver for our city).

So we wanted to take some time to celebrate the opening of Lylo and Arrive Hotel by taking you on a photo tour. Buckle up, because we’re about to take a colorful trip to flavor town.

The food and drinks are as vibrant as the space. Expect super fresh ingredients, Hawaiian-Japanese infused flavors and everything from hot fried chicken to cold spicy tuna. We tried the albacore tataki; mochiko fried chicken; Korean BBQ beef bowl; and we had to try the Spam musubi. (100 percent would do it again.)

Cocktails won’t disappoint because Ross is the best of the best. We tried the Dole Whipped — think icy pineapple soft serve and rum; the 3-Berry Daiquiri, and the creamy passion fruit Solero for good measure.

There’s literally not a bad view in this space. Both Lylo and the pool area are surrounded with lush gardens, like a chic uptown urban oasis. Bright colors, bold lines and eclectic patterns welcome you to the space, oh and there’s a pink foosball table too.

The rooms have a midcentury feel with an open-plan design. Crisp white sheets invite you to nap after a day at the pool, and a private, shady patios on nearly all rooms give you quick access to nature. Bonus: The reception area has a small gift shop with local goods, plus they sell housemade popsicles in a variety of flavors to make your stay even sweeter.

Bonus #2: Cartel Coffee has a beautiful new location on the hotel grounds, too. Be sure to stop in for a cold brew.
